what to expect

A snowshoe walk through the still forest leads to our wooden kota at the edge of our forest in lapland, the fire already burning outside. Around an open hearth set in the snow, a meal is cooked over the flames outdoor using local, seasonal ingredients. The kota is at hand for warmth between courses, but the table sits outside, beneath the trees, the way arctic meals were meant to be eaten. A slow stretch of walking, fire, and food taken without hurry, whether at midday or in the evening.
